Dr. Oz, Onion Chicken Nuggets and Meatless Taco Recipes by Hungry Girl Author Lisa Lillien on Dinner Swaps
Always on the go? Tempted to feed your kids by throwing some chicken nuggets into the microwave for 2 minutes? While the temptations are there to go the quick and easy route, Dr. Oz invited Lisa Lillien on the show that it's just as easy to make healthy meals in a matter of minutes. Lisa Lillien is the author of the infamous Hungry Girl recipes book.. Today, (Sept. 21, 2012) Lisa Lillien talks about dinner recipe swaps to use as healthier alternatives to chicken nuggets, pizza rolls, tv dinners, etc....
Ok, I just want to say that these were some great recipe ingredient swaps that Lisa Lillien came up with. I've used bran breadcrumbs on chicken before, but the rest I've never thought of! Do you have any dinner ingredient swaps that you could share? Please leave a comment before you leave!
Onion Chicken Nuggets Recipe
I must admit that I am guilty of throwing in chicken nuggets for my kids on more than a few occasions.. This is a healthy dinner swap that I'm going to try! Lisa explained to Dr. Oz that this recipe can be made in just 20 minutes. Not only is it easy to make, but there is only 211 calories and 2.5 grams of fat per meal. Compare that to the 490 calories and 26 grams of fat from a traditional serving of chicken nuggets! That's less than half the calories and about 10 percent of the fat! HUGE difference! I will be trying this recipe very, very soon!
Onion Chicken Nuggets Ingredients
- 1/2 of Cereal Bran
- 1 tablespoon of Onion Soup mix
- 1/2 tsp of dried minced onion
- 1/2 tsp of onion powder
- 1/3 cup of fat free egg substitute (I used egg substitutes for my kids breakfasts and they don't even know the difference. If I would tell them, they would probably say they didn't like it. lol)
- 10 ounces of chicken breast (cut the chicken into strips)
- Salt and pepper
- Set your oven to 375 degrees and preheat
- Grand bran cereal in a bowl to make the "bran breadcrumbs"
- Mix in onion mix and onion spices with the bran breadcrumbs
- Spread out in a baking pan
- Bake for 18 minutes (flip halfway through cooking)
Hungry Girl's Meatless Tacos Recipe on Dr. Oz - Beef Crumble Swap
Beef is a mainstay staple in a traditional American's diet. However, you can swap in "Meatless Soy Crumbles".. (this seems interested, but I'm skeptical). Meatless soy crumbles are pre-cooked and she said that it's flavored to taste like beef. The upside is that there is no saturated fat in Soy Beef Crumble". She said that you can swap in these beef crumbles in any recipe that calls for beef.. Ok, I have to try these crumbles that Lisa speaks of!
Hungry Girl's, Meatless Tacos Recipe and Ingredients
Ingredients :
- 2 cups of chopped mushrooms
- 1/2 cups of chopped onions
- 1/2 cup of soy crumbles
- 2 teaspoons of taco seasoning
- 6 taco shells
- 6 tbsp of low salsa (choose low fat salsa)
- Lettuce and cilantro (this can be optional if you don't like cilantro)
- Heat up pan or skillet on medium heat
- Cook onions and mushrooms in the pan until soft (this takes around 5 minutes)
- Lower heat. Add taco mix and the Soy Meat Crumbles to the pan.
- Stir around 2 minutes
- Add mixture to taco shells and top off with cheese and salsa
- Enjoy without the guilt!
