Gluten Free Veggie Pad Thai Recipe


Do you love Chinese food but know that you can't eat it because you are gluten intolerant? Well, it doesn't have to be that way.  Dr Oz invited Elizabeth Hasslebeck on to the show to share her Gluten Free Veggie Pad Thai Recipe.   Elizabeth Hasselbeck is the author the cookbook "Deliciously G Free" and one of her favorite recipes is the Vegetable Pad Thai Recipe.  You may also know Elizabeth from the popular daytime television show "The View".

I'm not gluten intolerant (to my knowledge) but this recipe looks really good regardless!  Please leave a comment below if you know of other gluten free recipes to share and if I get enough responses I'll make a whole section on this site sole for gluten free recipes!  Dr Oz has talked about gluten intolerance (and celiac's disease) many times on the show and the % of people who are actually gluten intolerant (and not even know it) is staggering!  If you aren't sure if you are gluten intolerant or not try some gluten free recipes for a week or two and see if some of the nagging symptoms associated with gluten intolerance disappears!

Veggie Pad Thai Recipe by Elisabeth Hasselbeck



Ingredients :

  • 1/2 lb gluten free wide rice noodles
  • 3 tablespoons gluten free fish sauce
  • 1/3 cup lime juice (fresh lime juice if possible)
  • 1 tablespoon gluten free rice vinegar
  • 1 tablespoon granulated sugar
  • 1 tablespoon extra virgin olive oil
  • 2 lightly beaten eggs
  • 1/4 cups of roasted and coarsely chopped peanuts (unsalted)
  • 2 cups of bean sprouts
  • 4 thinly sliced scallions (use both the white and green parts)
  • 1/2 cup chopped cilantro leaves.  Fresh cilantro preferably 
  • Optional : try adding chicken, shrimp, or low fat beef
Directions :
  • Cook noodles and drain
  • Sauce : Whisk the fish sauce, lime juice, rice vinegar, sugar, and olive oil
  • Mix noodles and sauce
  • Top the Veggie Pad Thai with peanuts, sprouts, and scallions
  • Whisk the eggs
  • Add oil to pan and cook eggs into omelet
  • Slice the omelet into strips.
  • Add omelet to noodles
  • Garnish with cilantro
  • Enjoy
Gluten free doesn't mean less fat or calories, but this recipe has nearly half the calories and more than half the fat!  A traditional take out Veggie Pad Thai recipe has 750 calories.  Elizabeth Hasselbeck's recipe has 11 grams of fat!


Dr Oz had three women sample this recipe and they all loved it!
