Diet Recipe's For Carb Lovers

Dr Oz had a show today just for carb lovers!  He invited fan favorite Lisa Lillian on to the show to share her diet recipes for carb lovers to enjoy without the guilt.  In case you didn't know, Lisa Lillian is the author of the best selling Hungry Girl books.

Dr Oz explained a little bit about what the problem is with refined carbohydrates.  When you eat refined carbs you don't stay full.  Within a short time after you eat them you are hungry all over again.  You will either keep snacking or you will be likely to binge later when you are ravenous with hunger.  The recipes that Lisa shared on the Dr Oz show today are made with the more healthy complex carbs featuring foods we all love like the "Cheeseburger Mac Attack Recipe", the "Loaded Pizza Potato Recipe", and the Loaded Baked Ziti

Cheeseburger Mac Attack Recipe
  • 5 ounces of uncooked high fiber elbow macaroni (5 ounces is approximately 1 1/3 cups)
  • 10 ounces of raw and lean ground turkey
  • 2 Tablespoons of ketchup
  • 3 Cups of frozen cauliflower pieces
  • 2 tablespoons of light sour cream
  • 1/2 cup of finely chopped onion (I know many people who dislike onions. I'm sure you can discard this ingredient but they are oh so healthy, why not leave them in unless you detest them?)
  • 2 slices of 2 percent American cheese.  Lisa Lillian (Hungry Girl) recommends laughing cow cheese because it only has 35 calories!  It is also lower in fat than comparable cheeses.
  • 5 wedges of light and creamy swiss cheese
  • 2 scallions (slice them thinly but be careful! Or buy them pre sliced)
  • Salt and black pepper are optional
Directions :
  • Cook the high fiber elbow macaroni pasta in a pot.  Cook for only HALF the time as indicated on the macaroni package
  •  Drain macaroni
  • Mix the ground turkey, onion, and ketchup (or catsup as some prefer it to be called) in a bowl
  • Mix in cauliflower and cooked pasta
  • Put your mixture of ingredients in a crock pot.  Cover and cook on the highest setting for 3 hours.
  • Reduce to low for 7 hours
  • Add remaining ingredients
  • Cover and cook until the cheese has melted (approximately 15 minutes should be sufficient)
  • Enjoy your delicious cheeseburger mac
They said on the show that traditional mac n cheese (with beef) has 770 calories) Lisa's Hungry Girl version only has 300 calories!  Big difference here folks.

Loaded Pizza Potato Recipe, Dr Oz, Hungry Girl Recipe, Lisa Lillian
Loaded Pizza Baked Potato

Ingredients :
  • Medium sized potato (this should be about 12 ounces)
  • 1 stick of light string cheese
  • 1/4 cup of chopped bell pepper
  • 1/4 cup of onion (chopped into small pieces)
  • 1/4 cup of chopped mushrooms
  • 1/4 cup of pizza sauce
  • 1/2 link of sweet Italian chicken and turkey sausage (bit size pieces)
Cooking directions :
  • Preheat broiler
  • Using a non stick cooking spray, spray down a baking sheet
  • Tear the string cheese into thirds and mix in a blender until shredded
  • Poke holes in potato with fork
  • Microwave for 5 minutes (in a microwave safe dish)
  • Flip potato over and cook for 5 more minutes (cooking times can vary on this according to microwave size.  The potato should be slightly soft on both sides)
  •  While the potato is cooking in the microwave, spray a skillet with non stick cooky spray and set to medium high heat.
  • Add pepper, mushrooms, and onion to skillet
  • Cook while stirring frequently for about 4 minutes
  • Add sausage and cook for two more minutes
  • Transfer the vegetable and sausage that you just cooked to a microwave safe bowl and cover
  • When the potato has cooled down peel off a 2 inch strip of potato skin (lengthwise)
  • Scoop out the inside of the potato and put the insides in a bowl
  • Put the potato shell on a baking sheek
  • Add the vegetable and sausage mixture that you cooked into the potato shell
  • Add half of the potato that you had just scooped out and set aside in a bowl
  • Add 3 tablespoons of pizza sauce
  • Sprinkle remainder of cheese on top
  • Broil potato 4 minutes
So how many calories did you save yourself (and your waistline?) A traditional loaded potato would be 620 calories.  Hungry Girl's Lisa Lillian's loaded pizza potato recipe contains only 350 calories!  I think I have all the ingredients needed to make this.  Think I have dinner all planned out.  I think this would go great with a healthy side salad!
